A Summer to Celebrate

Indulge in a delightful twist on the classic Victoria sponge! Filled with strawberry jam and topped with a layer of Pimm's whipped cream, this recipe is perfect for adding a touch of summer to your garden gatherings.

Ingredients

The Cake:

300g softened unsalted butter, plus extra for greasing

300g caster sugar

6 medium eggs

300g self-raising flour

3 tbsp semi-skimmed milk

The Pimm's Whipped Cream:

300ml double cream

6 tbsp Pimm's

3 tbsp icing sugar

The Decorations:

Strawberry Jam

5 strawberries

¼ cucumber, sliced

1 orange, segmented

1 small handful of mint leaves

1. Create the batter

Preheat and Prepare: Preheat your oven to 180°C (160°C fan) or gas mark 4. Grease and line two 20cm cake tins. Then begin to make the batter by creaming together the softened butter and caster sugar in a large bowl, until light and fluffy. Gradually incorporate the eggs, one at a time, beating well after each addition. Gently fold in the self-raising flour and semi-skimmed milk until you achieve a smooth batter.

2. Time to bake

Divide the batter evenly between the two prepared cake tins. Smooth the tops and bake for 25-30 minutes, or until a skewer inserted into the centre comes out clean. Allow the cakes to cool in the tins for 10 minutes before transferring them to a wire rack to cool completely.

3. Prepare the filling and assemble

In a bowl, whip the double cream, Pimm's, and icing sugar together until soft peaks form. This will be the filling for your cake, along with some strawberry jam (home-made optional!). Once the cakes are completely cooled, spread a generous layer of strawberry jam over one of the cakes. Add a thick layer of Pimm's whipped cream on top, then sandwich with the second cake layer.

4. Add the finishing touches

Decorate the top of your Victoria sponge with cream, slices of strawberries, cucumber, orange segments, and a handful of fresh mint leaves, just like a classic jug of Pimm's!
